A sweet and savory salad made with thinly sliced root veggies, arugula, and roasted lentils with a Dijon dill vinaigrette.

Ingredients: Arugula, red beets, orange beets, carrots, celery root, lentils, olive oil, salt.

Dressing ingredients: extra virgin olive oil, maple syrup, Dijon mustard (vinegar, water, mustard seed, salt, white wine, citric acid, turmeric), water, apple cider vinegar, garlic, dill, salt.
