Kale Quinoa Chakra Salad


This colorful salad has a base of kale with fruit, veggies, and spiced pepitas with a tahini dill dressing.

Ingredients: Kale, red quinoa, red beets, butternut squash, mint, yellow bell pepper, honey crisp apples, lime (on apples), blueberries, toasted pepitas (maple syrup, ground chili, cumin, coriander, garlic, salt). Dressing: tahini, water, apple cider vinegar, dill, salt, pepper.
